  • 1 tbsp Vegetable oil

  • 1/4 cup Sweet corn
  • 1 whole lemon Lemon juice

  • 1 tbsp Butter
  • 1 tbsp Garlic
  • 1 tbsp Sweet chili sauce
  • 1/4 teaspoon Pepper powder
  • 1 cup chopped finely Tomato
  • to taste Salt

For now, enjoy the delicious Mexican Rice.

Steps

To make tomato sauce. Heat butter in a pan.

Add chopped garlic, saute for a second and add chopped tomato.

Add pepper powder, sweet chili sauce, and salt. Cook covered on a low heat till the tomato is mushy. Keep it aside.

In a separate wok, add vegetable oil and saute with garlic. Add onion and fry till it is translucent in color.

Add 3 cup water and soaked rice.

Add tomato sauce, mix it well.

Add carrot, peas, corn and chopped tomato.

Add red chili powder, salt, cumin powder, lemon juice and coriander leaves. Mix it well, cook it covered on a high heat till the water starts boiling, then keep the heat low and cook for another 10 minutes till the rice cooked properly.

Switch off the stove, Delicious Mexican rice is ready to serve, Serve hot.

Ingredients

  • 2 cup soaked Chana dal
  • 2 medium size cut into cubed Potato
  • 1/2 teaspoon Turmeric powder
  • to taste Salt
  • 5-6 Dry red whole chili
  • 1/2 teaspoon Cumin powder
  • 1 teaspoon Cumin seeds
  • 1/2 teaspoon Fennel seeds
  • 10 cloves Garlic
  • 100 ml for cooking chana dal Water
  • for cooking paratha Vegetable oil
  • 2 cup Wheat flour
  • to knead the dough Water

Steps

In a pressure cooker, add soaked dal, turmeric powder, salt, dry red whole chili, potato, cumin powder, cumin seeds, fennel seeds, garlic, and water. Mix it well, and pressure cooks it on a high flame for one whistle, then keep the flame low and cook for another 10 minutes. Switch off the flame.

Dal is cooked properly, let it cool at the room temperature.

Grind the cook dal to make a smooth mixture. Do not add water while grinding. The filling is ready.

In a bowl, add flour and water. Knead the flour well to make a smooth dough.

Divide the dough into 8 equal portions. Take one portion of the dough and dust with some flour, and roll it into a circle of 3-4 inches in diameter. Put 2 tbsp chana dal filling in the center of the circle. Close all the edges in the center. Dust with some more flour and roll it using a rolling pin in a circle of 7-8 inches in diameter.

The paratha is ready to cook.

Put it on the hot Tawa.

Flip it after 30 seconds. Spread oil and cook it on a medium to low flame till light golden spots appear on both the sides of the paratha.

The delicious chana dal paratha is ready to serve, Serve hot with your favourite sauce and curd.

Steps

Add yeast, sugar and water in a bowl, cover and keep it aside for 15 minutes to get the yeast activates.

In a separate bowl, add all purpose flour, salt, vegetable oil and yeast sugar mixture. Mix it well. Add water and knead the flour well to make the soft and pliable dough.

Cover wet wet muslin cloth and keep it aside for 1 hours to get the dough doubled in size.

The dough is ready.

Prepare to top for the bread. In a small bowl, add oregano herbs, peri-peri spices, garlic, and butter. Mix it well.

Keep it aside.

Divide the dough into 2 equal portions. Take one portion of the dough and roll it into a thick chapatti. poke with your fingertips as shown below in the image.

Apply the butter-garlic mixture on the bread. Preheat microwave oven at 170C.

Bake it for 8-10 minutes till it is light golden in the color. Cut it into a pieces. Delicious bread is ready to serve.

  • 1/2 liter Water

  • 1/4 teaspoon Red chili flakes
  • 2 tbsp sweet chili sauce
  • to taste salt
  • 3 tbsp Honey
  • 2 tbsp chopped Coriander leaves
  • 1 tbsp Sesame seeds

Instructions

  • In a wok add water and potato pieces. Let it boil for 6-7 minutes on a medium to high flame.
  • Take out the boiled potato in a bowl and keep it in a freezer for 1 hour.
  • Now, the potato is cooled.
  • Add cornflour and mix it well.
  • Deep fry it on a high flame till it is golden and crisp.
  • Take out the fried potato pieces on a tissue paper to get rid of extra oil.
  • In a wok/pan, add vegetable oil. Saute with chopped garlic.
  • Add capsicum, and cook for 1 minute. Add red chili flakes, salt, sweet chili sauce, coriander leaves, and honey. Mix it well.
  • Add fried potato and mix it well. Add sesame seeds.
  • Mix it well and cook for 1 minute. Serve hot.

Add fried potato and mix it well. Add sesame seeds.

Mix it well and cook for 1 minutes. Serve hot.

Heat oil in a wok and add ginger and garlic. Saute it for seconds.

Add onion and fry for another second. Add carrot, capsicum, and cabbage. Fry it on a medium to high flame for 1-2 minutes.

Add pepper powder, sweet chili sauce, vinegar, red chili flakes, soy sauce, and salt. Mix it well with the veggies.

Add vegetable stock.

Add dissolved cornflour in the wok and stir with a spatula with avoid any lumps.

  • 2 tbsp Chickpea flour

  • for greasing mold Vegetable oil
  • 1/4 teaspoon Pepper powder
  • for deep frying sev Vegetable oil

You can now prepare it at home with all the hygiene and cleanliness and store it in an airtight container to keep it fresh for long.

Steps

Keep all the ingredients ready for bhujiya.

In a mixing bowl, add all the ingredients mentioned above in the table except oil. Mix it well.

Make a smooth dough.

Grease the bhujiya mold with vegetable oil. Divide the dough into 2 equal portions. Take one portion of the dough and roll it using your palm and put it in the mold. (refer video)

press the bhujiya maker directly in the hot oil in a circular motion as shown below in the image.

Deep fry it on a medium to low flame till it is light golden and crisp.

Take out the fried bhujia on a tissue paper to get rid of an extra oil.

Delicious, crisp and fresh aloo bhujiya are ready to serve. Put it in an airtight container for later use.

  • 7-8 Whole garlic cloves

  • 1 teaspoon Garlic, chopped
  • 2 cup Noodles, boiled
  • 1 cup Cabbage
  • 1/4 cup Carrot , thinly slice
  • 1/4 cup Capsicum, thinly slice
  • 1 Onion, thinly slice
  • 1/2 cup Sweet corn
  • 1 teaspoon Soya sauce
  • 1 tbsp Vinegar
  • to taste Salt

Steps

In a wok, add water, whole dry red chili, and garlic. Let it boil for 4-5 minutes. Switch off the heat and cool it at the room temperature.

Grind the boiled garlic and chili to make a fine paste.

In a separate wok, add vegetable oil and saute with chopped garlic. add onion and fry till it is translucent in color.

Add carrot, salt and ground chili-garlic paste and water, mix it well. Let it cook for 2-3 minutes.

Dissolve 1 tbsp corn flour in 2 tbsp water and mix it well. Add it to the wok and cook for 30 seconds. Switch off the heat and keep it aside.

In a separate wok, add vegetable oil and saute with chopped garlic.

Add onion and fry it for 30 seconds. Add capsicum, carrot and sweet corn. cook for 2-3 minutes on a high heat.

Add cabbage and cook for 2-3 minutes.

Add soya sauce, salt, noodles, vinegar and chili garlic paste. Mix it well.

Cook for one minute on a high flame. Switch off the heat. Delicious chili garlic noodles are ready to serve.

Steps

Heat the oil in a pan and temper with cumin, mustard and nigella seeds. When seeds start to crackle add onion.

Fry the onion till it is translucent in the color.

Add green chili and capsicum and cook for 2-3 minutes on a medium heat.

Add mashed potatoes, pepper powder, cumin powder, red chili powder, and salt. Mix it well. The sandwich mixture is ready.

Take the piece of the bread slice and spread the prepared mixture on one side of the bread and cover it with the other slice.

Heat the pan, apply butter on both the sides of the bread and cook it on low flame till the bread is light golden and crisp from both the side. Cut it into triangle and serve hot with your favourite sauce.

Soak dried peas overnight. In a pressure cooker, add soaked dried peas, water, and salt. Pressure cook it on a high heat for one whistle and keep the flame low and cook for 5-6 minutes.

Switch off the flame. Open cooker and the peas are well cooked.

  • Mix it well or till the mixture is frothy.
  • Add all-purpose flour and knead the flour well to make soft and elastic dough.
  • Knead the dough for about 8-10 minutes.
  • You can knead the dough on a flat surface.
  • Cover it with a plastic sheet and keep it aside for 30 minutes to get the dough doubled in size.
  • Here, the dough gets doubled in size. Knead it again for 5-6 minutes. Cover and keep it aside for 30 minutes again.
  • Divide the dough into 2 equal portions. Take one portion of the dough and roll it into a thick circle.
  • Cut it in circles using something circular, like Bangles, and cut out from the center using a bottle cap.
  • Deep fry it on a medium to low flame till it is golden and crisp.
  • Transfer it on a tissue paper to get rid of extra oil.
