    In a large bowl, combine rice flour, semolina, all-purpose flour, fenugreek leaves, chopped green chili, chopped onion, asafoetida, red chili powder, and salt.

    Add vegetable oil to the dry ingredients and mix well. Gradually add water, kneading until a firm, smooth dough forms.

    Divide the dough into 15 equal portions. Flatten each portion into a thin, round vada shape.

    Heat oil for deep frying in a heavy-bottomed pan over medium heat.

    Carefully slide the shaped vadas into the hot oil and fry until golden brown and crispy on both sides.

    Remove the Maddur Vadas with a slotted spoon and drain excess oil on paper towels. Serve hot.
