Ingredients:
Vegetable oil- 1/2 cup
Black pepper- 1/2 teaspoon
Cumin seeds- 1 tbsp
Cardamom green- 4-5
Cardamom brown- 2
Cloves- 6-7
Nutmeg- small piece
Mace- half flower
Cinnamon stick- 1/2 inch
Onion sliced- 1
green chili- 6-7
Curd- 1 cup
Ginger-garlic paste- 2 tbsp
Chicken- 1/2 kg
Basmati rice- 1/2 kg (washed and soaked)
Kewra water- 1 tbsp
Salt- as needed
Red food color- small pinch
Step By Step Instructions:
- In a pressure cooked, add in oil and saute with blackpepper, cumin seeds, cloves, cardamom green and cardamom brown.
- Add in cinnamon stick, nutmeg and mace.
- Add sliced onion and cook till it is light golden in color.
- Add green chili and ginger garlic paste. cook it for 2-3 minutes.
- Add in curd and cook for another one minutes.
- Add chicken and mix it well. Add 100 ml water and close the lid of a cooker. Pressure cook it on a high flame for one whistle, then slow the flame and cook for 3-4 whistle.
- Switch off the flame.
- In a wok, add 2 tbsp ghee and the cooked chicken as shown in the video.
- Add washed and soaked rice, mix it well. check salt, if need add more.
- Cook it on a high flame till the water starts boiling then keep the flame low and cook on low flame till the water absorbs.
- Mix kewra water with food color in a bowl and add it in the wok.
- Cook for another 10 minutes on low flame till the rice cooked properly.
- Biryani is ready to serve, enjoy it with your favourite dip.
