Story & Method

Ingredients:

Vegetable oil- 1/2 cup

Black pepper- 1/2 teaspoon

Cumin seeds- 1 tbsp

Cardamom green- 4-5

Cardamom brown- 2

Cloves- 6-7

Nutmeg- small piece

Mace- half flower

Cinnamon stick- 1/2 inch

Onion sliced- 1

green chili- 6-7

Curd- 1 cup

Ginger-garlic paste- 2 tbsp

Chicken- 1/2 kg

Basmati rice- 1/2 kg (washed and soaked)

Kewra water- 1 tbsp

Salt- as needed

Red food color- small pinch

Step By Step Instructions:

  1. In a pressure cooked, add in oil and saute with blackpepper, cumin seeds, cloves, cardamom green and cardamom brown.
  2. Add in cinnamon stick, nutmeg and mace.
  3. Add sliced onion and cook till it is light golden in color.
  4. Add green chili and ginger garlic paste. cook it for 2-3 minutes.
  5. Add in curd and cook for another one minutes.
  6. Add chicken and mix it well.  Add 100 ml water and close the lid of a cooker. Pressure cook it on a high flame for one whistle, then slow the flame and cook for 3-4 whistle.
  7. Switch off the flame.
  8. In a wok, add 2 tbsp ghee and the cooked chicken as shown in the video.
  9. Add washed and soaked rice, mix it well. check salt, if need add more.
  10. Cook it on a high flame till the water starts boiling then keep the flame low and cook on low flame till the water absorbs.
  11. Mix kewra water with food color in a bowl and add it in the wok.
  12. Cook for another 10 minutes on low flame till the rice cooked properly.
  13. Biryani is ready to serve, enjoy it with your favourite dip.
