Instructions

  1. 1

    Collect Cream

Boil full-cream milk and let it cool. Skim the thick layer of cream that forms on top and store it in a container. Repeat this process until you have a sufficient quantity of cream.

  2. 2

    Melt Cream

Transfer the collected milk cream to a heavy-bottomed pan and place it over medium-low heat.

  3. 3

    Simmer

Allow the cream to melt completely, then continue to simmer, stirring occasionally, to prevent sticking.

  4. 4

    Separate Solids

As it simmers, the cream will begin to bubble, and the milk solids will separate and settle at the bottom, turning golden brown. The clear, golden ghee will rise to the top.

  5. 5

    Strain Ghee

Once the ghee is clear and the solids are golden, remove the pan from heat. Carefully strain the hot ghee through a fine-mesh sieve or cheesecloth into a clean, dry, heat-proof jar.

  6. 6

    Cool and Store

Let the ghee cool completely to room temperature before sealing the jar. Store in a cool, dry place.
